An ingenious way to use the leftover apple pulp from the juicer: a very tasty, easy to make and crunchy apple granola!

Ingredients
200goats2 cups
60gnuts and seeds of your choice½ cup
200gleftover apple pulp or 150 g apple sauce
40g melted coconut oil2 tbsp
50ghoney2 tbsp
Zest of half a lemon
1tspcinnamon
¼tspground nutmeg
¼tspvanilla extract
Instructions
Preheat the oven at 180C/350F.
Place all the ingredients except the oats and the nuts in a large bowl. Mix well.
Add the oats and the nuts and seeds and mix until the oats have all been coated with the moist mixture.
Spread the granola on a baking tray covered with parchment paper, form with your hands a few small clusters of granola and bake for 10 minutes. Take the granola out of the oven, flip it with a large spatula and bake for another 10 to 15 minutes or until the granola will have a nice browned color.
Notes
You can decide to add more seeds and nuts than the recipe calls for, just remember to keep the balance between the dry and the wet ingredients, so either add more apple pulp or reduce the amount of oats.
