Chocolate pear brownies (dairy-, sugar- and gluten-free)

Ingredients
  • 2 eggs
  • 1 can of coconut milk
  • 100g barley flour (or almond flour for a gluten-free version)
  • 60g dark chocolate 70%
  • 10g unsweetened cocoa powder
  • 1 and a half teaspoon of honey
  • 40g coconut oil
  • One teaspoon of vanilla powder
  • Half a teaspoon of baking soda
  • Half a teaspoon of baking powder
  • One pear
  • One tablespoon of lemon juice
  • Cinnamon powder to taste
  • Ginger powder to taste
  • 5 amaretti biscuits crumbled (homemade or skip them for a sugar-free version)
Preparation
  1. Preheat the oven to 180°
  2. Melt the chocolate and the coconut oil in a pan on very low temperature
  3. Pour the coconut milk (only the dense part of it, not the water) and the eggs in a bowl and mix
  4. Add the honey and the dry and sieved ingredients (flour, cocoa powder, vanilla, soda, baking powder, cinnamon and ginger) and mix well
  5. Wash, peel and cut into small vertical slices the pear. Sprinkle with lemon juice
  6. Place some baking paper into a rectangular or square baking tin, pour and level the dough
  7. Sprinkle the crumbled amaretti biscuits on the dough and place the pear slices
  8. Bake for 25 minutes
