Chocolate pear brownies (dairy-, sugar- and gluten-free)

Serves: 12 slices
- 2 eggs
- 1 can of coconut milk
- 100g barley flour (or almond flour for a gluten-free version)
- 60g dark chocolate 70%
- 10g unsweetened cocoa powder
- 1 and a half teaspoon of honey
- 40g coconut oil
- One teaspoon of vanilla powder
- Half a teaspoon of baking soda
- Half a teaspoon of baking powder
- One pear
- One tablespoon of lemon juice
- Cinnamon powder to taste
- Ginger powder to taste
- 5 amaretti biscuits crumbled (homemade or skip them for a sugar-free version)
- Preheat the oven to 180°
- Melt the chocolate and the coconut oil in a pan on very low temperature
- Pour the coconut milk (only the dense part of it, not the water) and the eggs in a bowl and mix
- Add the honey and the dry and sieved ingredients (flour, cocoa powder, vanilla, soda, baking powder, cinnamon and ginger) and mix well
- Wash, peel and cut into small vertical slices the pear. Sprinkle with lemon juice
- Place some baking paper into a rectangular or square baking tin, pour and level the dough
- Sprinkle the crumbled amaretti biscuits on the dough and place the pear slices
- Bake for 25 minutes
